The lecithin is a new type of functional Lecithin developed by Guangdong Baimei Yide Biotechnology Co., Ltd., which is hydrolyzed by German advanced enzyme engineering technology. According to the characteristics of fat digestion and absorption, the Lecithin is the latest research achievement. Lysophosphatidylcholine is the main component of Lecithin. It is the monoacyl form of phospholipid, which not only preserves the hydrophilic and lipophilic group of ordinary phospholipid, but also retains the decrease of hydrophobic group and the removal of oxidizing unsaturated double bond structure. The hydrophilicity and stability of phospholipids were obviously increased, and the water dispersibility of phospholipids was better than that of ordinary phospholipids. It was suitable for the preparation of oil-in-water emulsion, and the emulsification performance was 5 times higher than that of ordinary phospholipids. It is easier to form chylous particles, and has stronger adaptability to temperature and PH, even under acid or low temperature conditions, it also shows stronger emulsification ability than ordinary phospholipids.
