How to brew Russian Ivan-Tea?First, rinse your teapot with hot boiling water. Use 1 - 2 tbsp of loose-leaf Ivan-Tea for 1 litre of water, pour in the boiling water until about 1/3 of the leaves are submerged, shake gently, then drain the water from the teapot. This way you will have steamed the tea, which will now produce a stronger and more fragrant aroma. Then pour in fresh water brought to rolling boil, and leave the tea to infuse for 5 minutes. What is interesting to note is that the same leaves can be brewed up to five times, without losing any of their taste or aroma, or any of their healing properties. This tea can also be served as a cold drink. Instead of sugar, it's best to serve it with dried figs or apricots, raisins, dates, or honey.

What is Ivan-tea fermentation and what is it for?
Fermentation of tea leaves is the most important stage of tea production.The term "fermentation" was first used in 1901 as the name of the oxidation process initiated by tea enzymes. The fermentation process accounts for the bulk of the chemical transformations that occur in the manufacture of tea. From the point of view of biochemistry, fermentation is an oxidation process. The enzymes contained in the Ivan-tea plant act as catalysts under the influence of oxygen. Ivan-tea enzymes not only start the oxidation process, but also "manage" it.

What does the fermentation of tea leaves? Simply put, the fermentation process determines what type of tea will result. If the degree of fermentation is weak, then green, white or yellow tea is obtained. With a strong degree of fermentation, black tea is obtained.

The fermentation process is also the activity of microorganisms that are located on the surface of the leaf. The point of fermentation is precisely to multiply living microorganisms (prebiotics). Therefore, the plant raw materials that are collected for the production of tea can not be washed in any case - the water will wash away all the microorganisms that are needed for the fermentation process.
