Acid stable Dipeptidyl Peptidase IV (DPP IV) is prolyl endopeptidase (EC 3. 4. 21. 26), also called prolinespecific endoprotease, originated from Aspergillusoryzae,belongs to the serine protease family and has the ability to cleave peptides at internal proline residues.
Acid stable Dipeptidyl Peptidase IV (DPP IV) can efficiently cleave the peptide bond involving proline residues of proline-rich proteinswhich isthe most frequent cause of haze in beer, wine,and clear fruit juices due to protein–polyphenol interaction, such as casein, gluten, collagen, and gelatin.
The Protease DPP IV produced by our company comes from Aspergillus oryzaeand it is a kind of food grade enzyme preparation which is formed by the method of biological fermentation.
